Spice things up by adding heat and seasoning to your regular fruit salad for a comforting and warm taste, paired with creamy yoghurt to wow your guests.
- ½ cup water
- ½ cup caster sugar
- ¼ cup lemon juice
- 1 strip lemon peel
- 2 star anise
- 1 tsp vanilla essence
- 3 pears or red apples, peeled, cored and sliced
- 1 seedless mandarin, separate segments
- 8 dried apricots, halved
- 1 cup frozen raspberries
- Thick yoghurt, to serve
In a large saucepan, combine water, sugar, juice, peel, star anise and vanilla. Stir over low fire until sugar dissolves.
Add pears, mandarin and apricots. Cook, covered, for 4 to 5 mins until fruits soften slightly.
Stir in raspberries. Remove from heat. Cool slightly.
Serve fruits and syrup in bowls topped with yoghurt.
