This prosciutto wrapped haloumi recipe is like an elevated version of the ham and cheese. Their heavenly combination is sure to take you by surprise on your very first nibble, and can make for a quick midday snack at home or on the go.
- 250 g haloumi cheese
- 6 slices gluten free prosciutto (90 g)
- 1 tbsp lemon juice
- 1 clove garlic, crushed
- 450 g bottled mixed olives and baby gherkins, drained
Cut haloumi into 12 slices. Cut prosciutto in half crossways; wrap haloumi in prosciutto.
Cook haloumi on a heated oiled grill pan (or grill or barbecue) over medium heat, 2 mins each side or until prosciutto starts to crisp.
Drizzle with combined juice and garlic; season to taste. Serve with mixed olives and gherkins.
