Bread has always been a breakfast staple for its carbs to give your morning an easy jump start. Add a delicious twist while keeping healthy with a spread of miso, alongside avocado, rocket leaves, capsicum and tomatoes!
- 1 avocado, mashed
- 1 tbsp miso paste
- 2 tbsps lemon juice
- 4 slices multigrain bread, toasted
- 20 g baby rocket leaves
- ½ red capsicum, thinly sliced
- ¼ cup drained, chopped sun-dried tomatoes, thinly sliced
- 1 tbsp balsamic vinegar
Place avocado, miso and juice in a bowl, coarsely mash.
Spread bread with avocado mixture.
Top with rocket, capsicum and tomato.
Serve drizzled with balsamic vinegar.
Tip: For a wholesome breakfast, serve bruschetta with some crispy bacon, and poached or fried eggs.
