Bacon And Vegetable Slice

Ingredients

  • 4 slices lean bacon, chop finely
  • 100 g (1 cup) grated zucchini
  • 50 g (½ cup) grated carrot
  • 50 g (½ cup) grated cheese
  • 75 g self-raising flour
  • 40 ml vegetable oil
  • 3 eggs, beat lightly
  • Salt and pepper, to taste

Steps

01. Preheat oven at 180 C. Grease and line a 12 x 22 cm loaf tin.

02. Combine bacon, zucchini, carrot and cheese in a large bowl. Add flour and toss it through the vegetables.

03. Whisk oil and eggs together, then add to the dry ingredients. Stir to combine. Season with salt and pepper.

04. Pour mixture in the loaf tin and spread evenly. Bake for 45 mins or until golden and firm to touch. Remove and allow to cool. Cover with plastic wrap and store in the fridge until ready to use. Slice into pieces before packing.
