These stuffed tomatoes are a quick meal that looks and tastes delicious. The flavours of the tuna, tomatoes and cheese match perfectly. They make a nutritious after-school snack for kids too!

Ingredients

  • 2 cans tuna, drained and flaked
  • 1 tbsp onion, diced
  • ½ tsp fresh tarragon, chopped
  • 2 tbsps dijon mustard
  • ½ cup dry bread crumbs
  • 1 tbsp green bell pepper, diced
  • 3 tbsps extra virgin olive oil
  • ½ cup mozzarella, shredded
  • 4 large tomatoes
  • Salt and pepper, to taste

Preheat oven to 200 C.

Cut a thin slice from the top of each tomato and scoop out most of the pulp leaving a thick shell so that the tomato will hold its shape.

Turn them over on paper towels, with the bottom up and set aside.

Mix tuna, bread crumbs, onion, bell pepper, tarragon, olive oil, dijon mustard and salt and pepper to taste.

Stuff each tomato with tuna salad mixture and top with shredded mozzarella.

06.

Place on a lightly greased pan and bake for 15 – 20 mins.

07.

Serve hot with toasted bread.
