Chicken & Kale Power Soup

This hearty chicken & kale power soup is ideal for when you aren’t feeling quite yourself and need an extra boost of nutrients.

Ingredients

  • 1 leek, halved
  • 2 carrots, halved
  • 3 stalks celery, halved
  • 4 sprigs thyme
  • parsley
  • 3 bay leaves
  • 4 litres water
  • 1 x 2 kg chicken
  • 1⁄3 cup raw rice and barley mix
  • 500 g sweet potato, peeled, cubed
  • 1 bunch green kale, chopped
  • 200 g baby grape tomatoes

Steps

01. In a large stock pot, combine leek, carrots, celery, thyme, parsley, bay leaves and water. Bring to boil. Simmer, covered, 3 hours.

02. Add chicken and poach on low heat 2 hours, or until cooked through. Cool. Remove chicken. Drain stock, discarding vegetables.

03. Remove meat from chicken. Discard bones and skin.

04. Place strained stock into a large pot and bring to boil. Add rice mix and boil 10 mins. Add sweet potato and boil a further 10 mins, until grains and potato are tender.

05. Roughly shred chicken with two forks. Stir through soup along with kale and tomatoes to serve.
