Perfect for kids and adults alike, this quick combination of spinach, avocado, tuna and corn wrapped in wholemeal lavash (flatbread/wrap) is easy to eat and so easy to make.
- 185 g can tuna in spring water, drained
- 125 g can corn kernels, drained
- 1 tbsp mayonnaise
- 2 wholemeal lavash/flatbread/wrap
- 1/2 small avocado
- salt and freshly ground black pepper
- 30 g baby spinach leaves
Flake tuna in a medium bowl; add corn and mayonnaise.
Spread half of each lavash with the avocado, season with salt and pepper. Spread tuna mixture over avocado, then top with spinach. Roll up tightly to enclose. Wrap in greaseproof paper or plastic wrap.
Refrigerate until ready to serve or pack in a lunch box with a freezer brick.
