Chicken and mango make a harmonious and playful marriage of flavours few can resist. A tantalising choice for a refreshing and tasty meal, this is a salad that can conjure up appetites even when temperatures soar.


  • ½ cup (60 ml) lime juice
  • 1 tbsp fresh coriander (cilantro), finely chopped
  • 1 fresh small red Thai (Serrano) chilli, chopped finely
  • 2 tsps light soy sauce
  • 100 g mixed salad leaves
  • 1½ cup (240 g) barbecued chicken, shredded
  • 2 medium-piece (860 g) mangoes, sliced thinly

Make dressing. Place ingredients in screw-top jar, shake well. Season to taste.


Place salad leaves, chicken, mango and dressing in large bowl, toss gently to combine. Season.

TIP You need half a barbecued chicken weighing about 450 g for this amount of shredded chicken.
