- 375 g spelt pasta of choice (available at health food stores like Supernature at Forum The Shopping Mall)
- 2 bunches broccolini, halved lengthways (broccolinis have smaller florets than broccoli)
- ¼ olive oil
- 2 leeks, thinly sliced
- 3 garlic cloves, crushed
- 1 lemon, zest, juice
- 150 g goat’s cheese
- ½ cup crumbled walnuts, toasted
In a large saucepan of salted boiling water, cook pasta following packet instructions. Add broccolini for final 1 min of cooking time.
Meanwhile, in a large frying pan, heat oil on medium-low. Saute leek and garlic, 5 to 6 mins, until leek softens.
Drain pasta and broccolini, adding to leek mixture with juice. Stir over high heat to combine. Season to taste.
Crumble cheese over and sprinkle with nuts and zest to serve.
