There are two types of oyster omelettes that we can find in Singapore. The first is referred to as 'orh dan' or 'orh nerng' that features pan-fried eggs topped with oysters, spring onion and coriander. The second is 'orh jian' or 'orh luak', which comprises the same ingredients though with fewer eggs and the inclusion of a potato starch batter. This first version tends to be fluffier and eggier while the second kind is more moist and has a contrast between gooey and chewy and crisply fried.
There's a less well-known third variant of the Teochew dish too. The Tang Shan-style oyster omelette is much wetter, gooier and softer as it is made with more of the potato starch batter. Whichever you prefer, all of these celebrate the briny, umami goodness of oysters that get accentuated further with a zingy, spicy chilli dipping sauce.

Lim’s Fried Oyster
You must be really confident in how the dish taste for it to be the only item you sell. And at Lim's Fried Oyster, they are precisely that. The sole product on their menu is the namesake dish, which comes in two forms Fried Oyster (with starchy batter) and Oyster Omelette (without starchy batter). Now headed by second-generation owners, the hawker stall uses extra large oysters from oysters. Lim's also does a rare and wetter version of fried oyster dubbed Tang Shan Chao.

Hougang Oyster Omelette & Fried Kway Teow
Hougang Oyster Omelette & Fried Kway Teow started life as a pasar malam stall over 30 years ago before finally settling down at its Hougang location today. The owners are a husband and wife team Mr Ong and Madam Lim - the former is charge of oyster omelette while the latter prepares char kway teow - ensuring the best product they can produce. Cooked with lard and served with homemade chilli sauce, you can also opt for prawns instead of oysters, especially if you don't eat the mollusc.

Maddie’s Kitchen
Tucked inside Far East Plaza, Maddie's Kitchen by owner-chef Mui Leng is a hotspot along Orchard Road to enjoy hearty zi char fare. Besides Hainanese curry rice, seafood white bee hoon, various types of hor fun and more, the Oyster Omelette is a dish that many patrons return for. The oyster omelette here is the starchy kind, but it is made with less batter and is in turn crispier and eggier than others.

Xing Li Cooked Food
There are a few oyster omelette stalls in Old Airport Road Food Centre. The highest-rated one though, is Xing Li Cooked Food. Here, you can choose between Oyster Egg (sans starch) and Fried Oyster (with starch), all cooked by a lone uncle. In case you're curious of the difference, the version without starch uses more eggs and would be fluffier in texture. The addition of starch, meanwhile, adds a nice chew to contrast with the crunchy fried bits but can get a tad cloying.

Song Kee Fried Oyster
Song Kee Fried Oyster is another purveyor of oyster omelette that has made it onto the Michelin Guide list. They offer both Oyster Egg and Fried Oyster (i.e. the one with starch) here, with the latter being a fan favourite for its balance of crispness and chewiness. We know East Coast Park can be troublesome to get to, but it is worth the meal accompanied with sea view and breeze. Despite so, head to Song Kee Fried Oyster early or be prepared to wait in line.

Hup Kee Fried Oyster Omelette
Newton Food Centre has gotten a rep for being a tourist hotspot than a gourmet heaven. But within its midst is Hup Kee Fried Oyster Omelette, a stall that has been around since the 1960s. It is currently helmed by a second-generation owner and remains a popular stall with snaking queues out front. Oyster omelette and oyster egg are both available here and they aren't cooked with lard. Also, do note that the prices here are a tad higher ($8 and up) than others, owing to the prime location.

Heng Carrot Cake
Founded in 1971, Heng Carrot Cake is another option at the crowded Newton Food Centre. And while the name doesn't exactly make you think of "oyster omelette" at first go, the Michelin Bib Gourmand stall has courted many fans with their rendition of the dish alongside its signature Carrot Cake. No pork or lard go into making their dishes either.

Ah Chuan Fried Oyster Omelette
Ah Chuan Fried Oyster Omelette is a well-known stall that many flock to despite its slight out-of-the-way location from the nearest Toa Payoh MRT station. In fact, it was named one of the Hawker Legends by Makansutra back in 2005. The owners has since changed, likely due to age, and the stall is now said to be headed by the owner's brother. Pick between Oyster Omelette and Oyster Egg.

Hock Kee Fried Oyster
Hock Kee Fried Oyster was founded by Simon Poh and his wife Joey Lim. The former has been cooking oyster omelette since young and finally started his hawker stall in 1997. They are also located in Serangoon Garden Food Centre, which is in the vicinity of the more famous Chomp Chomp but with less crowd. Hock Kee offers Fried Oyster (with starch), Oyster Omelette (without starch) and the elusive Tang Shan Fried Oyster.

Huat Heng Fried Oyster
Huat Heng Fried Oyster isn't the most accessible stall to get to as both the nearest MRT stations Boon Keng and Novena are a fair distance away. Yet, it is still worth the trip to the Michelin Plate-recommended stall where an elderly man cooks each plate. Here, the oyster omelette is the only item on the menu and there are multiple sizes to pick from. And unlike other places, the oyster omelette at Huat Heng is chopped to bite-sized pieces for convenient eating.
