Chinese Singaporeans with ancestry linked to Fuzhou province in southeastern China are few compared to larger groups such as the Hokkien, Teochew, and Cantonese. Yet, one of their snacks — the Fuzhou oyster cakes — is a delightful yet increasingly uncommon food here. The savoury fritter is made with rice and contains fillings such as oysters, minced pork, prawns, peanuts, whitebait, coriander, and more. It is then deep-fried to a golden brown and crunchy finish, with its resemblance likened to a UFO. Because of its rarity, we're spotlighting seven places where you can still find Fuzhou oyster cakes in Singapore. 1. Maxwell Fuzhou Oyster Cake

Food is likely great when a brand only has one item on the menu. In the competitive Maxwell Food Centre, Maxwell Fuzhou Oyster Cake only sells Oyster Cake ($2.50). Pang Siew Ting started the hawker stall in 1962 and is now helmed by her children. It was also named in this year’s Michelin Guide.

2. Fu Zhou Oyster Cake

Like the previous entrant, Fu Zhou Oyster Cake is another famous stall tucked within a popular food centre that only sells a single product. The stall has been serving up these UFO-shaped cakes since 1982. Here, you can pick what toppings you would like inside your fritter, ranging from the Original ($3.50) with minced pork, prawns, and oysters to Salmon + Pork ($4.50) and Scallop + Pork ($3.50). There are also Veggie Fritters ($2.50).

3. Sixth Floor Oyster Cake

Founder Khung Wai Yeen started Sixth Floor Oyster Cake in October 2021 as a home-based business from his sixth-floor HDB apartment. Its popularity led him to open a shop that has grown to three branches islandwide. There are four flavours to choose from: Original Oyster Cake ($3.70), Kimchi Oyster Cake ($3.70), Mala Oyster Cake ($3.90), and Scallop Oyster Cake ($4.20).

4. Fu Zhou Poh Hwa Oyster Cake

We cannot discuss oyster cakes without mentioning Fu Zhou Poh Hwa Oyster Cake. The hawker stall headed by Mr Tan and his wife Jenny in Berseh Food Centre dates back to the 1950s and is one of the more well-known spots for the humble snack, getting good reviews for its fresh ingredients and crispiness. Only oyster cakes are available here in Normal ($2.80) and Upsize ($3.30).

5. Oyster Boy

Designer Edmund Lye established Oyster Boy in March 2023 after deciding to leave his job as a graphic designer. He fell in love with Fu Zhou Poh Hwa’s oyster cakes and decided to reverse engineer and make his own iteration. After six months of trial and error, he made his own and started the Golden Mile Food Centre hawker stall. Pick between Original ($3) and Prawn ($3).

6. Teochew Meat Puff

The only thing “Teochew” about Teochew Meat Puff is that a Teochew makes the Fuzhou dish. Teochew Meat Puff is available at pasar malams around Singapore and you have to check its social media to find out where they are. Local food vendor Hoo Eng started the brand over thirty years ago and is now managed by his son Keith. Prices for oyster cakes range from $4.50 to $5 a pop, with toppings ranging from Oyster Pork to Scallop Pork.

7. Gim’s Heritage Fuzhou Fresh Oyster Cake

Gim’s Heritage is the retail arm of the Hock Lian Huat Foodstuff Industry. It started as a hawker stall before becoming a food manufacturer and supplier selling a variety of local favourites such as Fried Bee Hoon, Sotong Ball, Ngoh Hiang, and more. You can buy frozen Oyster Cakes ($13 for six pieces) from them, reheat them through deep- or air-frying, and enjoy them in the comfort of your home any time of the day.
