The composition of this simple pork noodle stir-fry makes it perfect for a weeknight meal. Featuring stir-fried pork, flat rice noodles, and a sweet soy-based sauce, this one is no doubt satisfying and delicious!

Ingredients
- 500 g fresh wide rice noodles
- 1½ tbsps peanut oil
- 500 g pork fillet, sliced thinly
- 300 g gai lan, chopped coarsely
- 3 clove garlic, crushed
- 2 tbsps light soy sauce
- 2 tbsps dark soy sauce
- 2 tbsps light brown sugar
- 1 egg
Steps
01. Place noodles in large heatproof bowl, cover with boiling water; separate with fork, drain.
02. Heat 1 tbsp of the oil in wok; stir-fry pork, in batches, until browned. Remove from wok.
03. Separate leaves and stems from gai lan. Heat remaining oil in wok; stir-fry gai lan stems until tender. Add gai lan leaves and garlic; stir-fry until gai lan wilts. Return pork to wok with noodles, sauces and sugar; stir-fry until hot.
04. Make a well in centre of noodles, add egg; stir-fry egg until egg and noodle mixture are combined, season to taste.
