This humble fruit makes a delicious addition to salads and mains, and is highly nutritious. Tomatoes are rich in beta-carotene, which converts to vitamin A when eaten. It also helps to protect the skin from the sun's UV rays, especially when tomatoes are cooked.

Tomatoes also contain vitamins C, E and K (phylloquinone), and essential minerals like potassium, which is said to lower the risk of getting stroke. Not to mention, this high-fiber, low-calorie fruit is high in folate or vitamin B9 to help facilitate normal tissue growth and cellular functions.
